No Bake Peanut Butter Protein Cookies
Ingredients:
- 1 cup all natural peanut butter
- 4 scoops Gold Standard Whey protein powder (I like 2 scoops Optimum Nutrition Double Rich Chocolate and 2 scoops Optimum Nutrition White Chocolate)
- 1 teaspoon vanilla extract
- ¾ cup Splenda (feel free to add more or less – sweetness is to your taste)
- Water (the amount of water needed will vary depending on the consistency of the peanut butter you use as well as its oil content)
Instructions:
- Combine peanut butter, protein powder, vanilla extract, and Splenda in a mixing bowl and mix together. You can use a mixer, which works great for this, or your hands.
- Slowly add water until mixture is dough-like.
- Roll into balls, then flatten between your hands.
*Note: The finished product will be soft at room temperature so you can’t throw them in a bag and expect them to hold their shape! - Place on wax paper and put into the freezer to harden.

Hey Katie. The serving on these cookies is really up to you. You can go big or go small. I prefer small simply b/c I like smaller sized treats:) Calculate nutritional content based on the individual peanut butter and protein powder you use. Since I use all natural peanut butter that has 180 calories for 2 tablespoons, I multiply this by 8 (16 tablespoons to a cup), then add the content of my protein (Optimum Nutrition Gold Standard Whey) to the peanut butter total. Since it’s a “healthy” snack, try to make around 25 or so cookies per batch, which will keep the nutritional content of the individual cookie at a reasonable level:):)
