Baked Sweet Potato Fries – Healthy and Yummy!

Eating the same thing night after night can get really boring…and fast!

To keep things fresh, I play around with some of my family’s favorite recipe to make them healthier, while still maintaining the overall taste and quality of the original sugar and fat filled recipe.

Ingredients:

Cookie Sheet

1 Medium Sweet Potato

1 Egg White

Pinch of cinnamon

Pinch of Splenda

1/2 Tablespoon Extra Virgin Olive Oil

Pam Cooking Spray (to coat your cookie sheet)

 

Directions:

Begin by preheating your oven to 450 degrees.  While the oven is heating, place a cookie sheet into the oven to warm up.  Leave cookie sheet in the over for approximately 5 minutes past preheating so it gets nice and hot.

While the oven is preheating, cut sweet potato into fry shaped strips and place into quart size plastic bag.

Add egg white, cinnamon, Splenda, and EVOO to plastic bag, zip, and shake.

Using a pot holder, pull the hot cookie sheet out of the oven and spray with Pam cooking spray.

Place sweet potatoes on cookie sheet with a little space between each slice and bake for 10-12 minutes.

Using a spatula, flip the sweet potato slices and cook an additional 10 – 12 minutes on the other side.

Let cool and enjoy!

 

Three Tips –

* Like crispier fries?  Trying switching the oven to Broil for a few minutes before removing fries from oven.  Be careful and watch your fries because the Broil setting will crisp the potatoes quickly!

* Not a fan of cinnamon and Splenda?  No worries.  Substitute these ingredients with a pinch of garlic power and pepper for flavor instead!

* If you like you’re sweet potatoes sweeter, sprinkle Splenda and cinnamon on top after cooking.
